To make this oil, the olives are harvested in November, when they are still early. We blend all our varieties with a majority of Aglandau and Cayon. Once the olives have been hand-picked, they are transported to a partner mill where they are crushed to extract the oil. This structure is equipped with equipment for precise temperature control and cold extraction to avoid oxidation.

Our olive oil is extra virgin, aromatic and well-balanced. This fruitness comes from the olives less advanced state of ripeness at the time of harvest. Subtle herbaceous aromas stand out, such as asparagus and fresh grass. The ardency on the finish lengthens the tasting experience.
