Highlights
🌿To make this oil, the olives are harvested in November, when they are still early. We blend all our varieties with a majority of Aglandau and Cayon. Once the olives have been manually harvested, they are transported and crushed in a partner mill to extract their oil. This structure is equipped with equipment allowing precise temperature control with cold extraction to avoid any oxidation.

📝At the tasting:
This fruitiness comes from the less advanced state of maturity of the olives during their harvest. Aromatic and balanced, subtle herbaceous aromas stand out, such as asparagus or fresh grass. The aroma present at the end of the mouth extends the tasting.
🍽️Food & wine pairings:
This intense oil will go wonderfully well with cold starters such as a Niçoise salad, a cress salad, arugula or mozzarella tomatoes. You can also associate it with fatty fish (sardine, herring, salmon) or even white meats.
