Highlights


🌿We harvest the olives later when they are black, at maturity. The oil will thus be softer with a lighter aroma. We mix all our varieties by incorporating a dominant of Bouteillan, Ribiers and Bécu de Lorgues. The olives are not directly pressed, they will be placed in closed boxes where the fermentation will start. The temperature will be controlled for a few days. The olives will then be crushed and the dough obtained will be pressed to obtain a very soft oil.

📝At the tasting:
Our ripe fruity olive oil is creamy, round and sweet. One feels smoky notes, undergrowth and mushrooms, aromas of olive paste and dried fruits like almond. It presents a beautiful complexity.

🍽️Food & wine pairings:
This softer and subtle olive oil will ideally accompany shellfish and lean fish such as cod, monkfish or sole. You can also combine it with a ratatouille or even with a ripened cheese. It is ideal in desserts to replace butter.
