Highlights


We harvest the olives later, when they are black and ripe. The oil will be sweeter with a lighter ardor. We blend all our varieties, incorporating a dominant proportion of Bouteillan, Ribiers and Bécu de Lorgues. The temperature is controlled for a few days. The olives are then crushed and the resulting paste pressed to obtain a very sweet oil.

Our ripe fruity olive oil is smooth, round and mild. Smoky, undergrowth and mushroom notes, aromas of olive paste and dried fruits such as almonds. It offers a nice complexity.
